Specialty Chef – Thai Cuisine

About the role

Radisson Blu Resort in Fiji is looking for a Specialty Chef who will lead the Thai kitchen. You will create authentic Thai dishes that meet brand standards and delight guests, while supporting the overall culinary operation of the resort.

Key responsibilities

• Prepare and present high‑quality Thai dishes in line with approved recipes and guest expectations.
• Take ownership of the Thai kitchen section, ensuring smooth preparation, service and consistent portion control.
• Maintain mise‑en‑place, stock rotation, storage levels and minimise food waste.
• Support food costing, inventory control, ordering and management of kitchen expenses.
• Uphold the highest standards of food safety, hygiene, HACCP and workplace safety.
• Guide, train and mentor junior chefs, promoting teamwork and professionalism.
• Contribute ideas for menu development, recipe standardisation and continuous culinary improvement.

Required profile

• Certificate or Diploma in Culinary Arts or equivalent qualification.
• 4–6 years’ experience in hotel, resort or professional kitchen operations with strong focus on Thai cuisine.
• Proven ability to lead, guide and mentor kitchen team members.
• Strong knowledge of HACCP, food safety and kitchen safety standards.
• Flexibility to work shifts, weekends and public holidays.
