Chief Steward

About the role

The Chief Steward leads all stewarding and kitchen utility functions for a resort on Denarau Island. This senior position ensures immaculate cleanliness, efficient banquet support, and seamless coordination between the stewarding team and culinary operations.

Key responsibilities

• Oversee daily stewarding activities, including dish‑room operations, night cleaning, and back‑dock maintenance.
• Support banquet functions by managing plating, food running, and equipment readiness.
• Maintain inventory of clean china, glassware, silverware, and kitchen equipment.
• Monitor stock levels of cleaning supplies, chemicals, and smallwares.
• Conduct regular inspections to uphold hygiene, safety, and brand standards.
• Ensure proper functioning of food transport and holding equipment.

Required profile

• Proven experience in stewarding or kitchen utility management, preferably within a hotel or resort environment.
• Strong leadership skills with the ability to motivate and develop a stewarding team.
• Excellent organizational abilities and attention to detail.
• Commitment to guest satisfaction and high‑quality service delivery.

Required skills

• Knowledge of commercial dishwashing machinery and cleaning chemicals.
• Familiarity with sanitation and food‑safety regulations.
• Ability to manage inventory and control costs.
