Commis 1 – Kitchen Assistant

About the role

Marriott International is seeking a motivated Kitchen Commis to join its food and beverage team in Nadi, Fiji. The role focuses on preparing ingredients, cooking simple dishes, and maintaining a clean, safe kitchen environment.

Key responsibilities

• Portion, chop, wash, peel and store fresh fruits, vegetables and other ingredients.
• Weigh, measure, mix and follow recipes to prepare both hot and cold foods.
• Operate ovens, stoves, grills, microwaves and fryers safely and efficiently.
• Monitor cooking progress, test food for doneness and ensure presentation standards are met.
• Set up and break down work stations, serve food in proper portions, and maintain hygiene of all kitchen tools and surfaces.
• Check appliance and food temperatures, report maintenance needs and follow safety policies.

Required profile

• Fiji citizenship.
• High school diploma or G.E.D. equivalent.
• At least one year of related kitchen or food‑service experience.
• Ability to stand, walk, bend, lift up to 25 lb and perform repetitive motions throughout the shift.

Required skills

• Operating ovens, stoves, grills, microwaves and fryers.
• Food preparation and basic cooking techniques.
• Knowledge of food safety, hygiene and temperature control.
