About the role
The Commis I supports daily kitchen operations by preparing and cooking high‑quality food items in line with recipes, portion standards and food‑safety procedures. Working on Tokoriki Island, the role ensures cleanliness, safe equipment use and contributes to guest satisfaction.
Key responsibilities
- Prepare and cook assigned dishes following recipes, portion and quality guidelines.
- Assist in setting up and breaking down workstations and perform basic food preparation such as washing, chopping, peeling and measuring ingredients.
- Operate kitchen equipment safely and monitor food and equipment temperatures during service.
- Maintain cleanliness by washing and sanitising kitchen areas, tools, knives and equipment.
- Ensure compliance with food‑safety standards and report any maintenance or safety concerns.
- Communicate effectively with the team, support collective goals and uphold high standards of food presentation.
- Perform additional tasks as directed by supervisors to keep kitchen operations running smoothly.
Required profile
- High school or tertiary qualification in Cookery or Culinary Arts.
- 1‑2 years of experience in a commercial kitchen or similar food‑preparation environment.
- Good understanding of basic cooking techniques, food handling and HACCP‑aligned hygiene practices.
- Ability to follow recipes, maintain consistency and work efficiently during busy service periods.
- Strong communication, positive attitude and ability to work effectively within a team.
- Legal right to work in Fiji and willingness to follow a rostered stay‑on‑island schedule.
