Chef de Cuisine - Tatavu

About the role

The CDC Mexican will lead the preparation, presentation and innovation of authentic Mexican cuisine across all dining outlets at Tatavu. This senior kitchen position blends traditional Mexican flavors with modern presentation and local Fijian influences to deliver an exceptional guest experience.

Key responsibilities

• Maintain the highest culinary standards, ensuring food quality, flavor, and presentation meet brand expectations.
• Develop, design and launch new menu items, both daily and seasonal, incorporating Mexican and local influences.
• Supervise kitchen shift operations, manage food quantities, plating requirements and ensure compliance with Food & Beverage policies.
• Enforce food safety, proper handling, storage and temperature controls in line with applicable laws.
• Lead, coach and schedule kitchen staff, fostering cross‑training and a collaborative team environment.
• Set and monitor kitchen performance goals, budget targets and operational metrics.

Required profile

• Proven experience as a Chef de Cuisine or similar senior kitchen leadership role.
• Deep knowledge of authentic Mexican cuisine and ability to adapt recipes to local ingredients.
• Strong understanding of food safety regulations and best practices.
• Excellent leadership, communication and team‑building skills.
• Ability to work under pressure and deliver consistent quality.
