Director of Food & Beverage

About the role

The Director of Food & Beverage provides strategic leadership and operational oversight for all food and beverage outlets at a Westin resort in Fiji. This senior role ensures the delivery of Westin brand standards, exceptional guest experiences, and strong financial performance.

Key responsibilities

• Lead and oversee all Food & Beverage operations across restaurants, bars, in‑room dining, banquets, catering and culinary functions.
• Develop and execute F&B strategies aligned with Westin/Marriott brand standards and property goals.
• Drive revenue growth through innovative concepts, promotions and partnership opportunities.
• Manage the annual F&B budget, monitor financial performance and control labor and operating costs.
• Collaborate with Sales, Marketing, Revenue Management, Finance and HR to achieve business objectives.
• Ensure consistent delivery of high‑quality food, beverage and service standards.
• Identify and implement operational improvements to enhance efficiency and guest satisfaction.

Required profile

• Proven senior leadership experience in Food & Beverage operations within a hotel or resort environment.
• Strong financial acumen with experience managing budgets, P&L and cost controls.
• Ability to develop and execute strategic plans that drive revenue and profitability.
• Excellent communication and partnership skills to work with cross‑functional teams.
• Commitment to delivering exceptional guest experiences and fostering employee engagement.
