Commis III – Bakery

About the role

The Commis III – Bakery joins Marriott International’s kitchen team on Denarau Island, supporting the preparation and cooking of bakery items in a high‑volume hospitality environment. This full‑time, on‑site role focuses on delivering consistent quality and presentation while adhering to strict food safety standards.

Key responsibilities

• Prepare and cook bakery products according to recipes, quality, and presentation standards.
• Portion, chop, and store ingredients; measure and mix products accurately.
• Operate baking equipment, ovens, mixers, and pastry tools safely.
• Maintain food safety, hygiene, and HACCP procedures, including temperature checks.
• Wash, disinfect, and set up/break down the kitchen workstation following sanitation protocols.
• Monitor food quality and portion sizes throughout the shift.
• Follow company policies on safety, uniform standards, and professional communication.

Required profile

• High School Certificate/Form 6 or equivalent.
• Certificate or Diploma in Culinary Arts, Pastry & Baking, Commercial Cookery, or Hospitality is an advantage.
• Basic knowledge of pastry preparation, baking, and dessert production.
• Understanding of food safety, hygiene, sanitation, and HACCP practices.
• Eligibility to work in Fiji.
