Commis III – Kitchen Assistant

About the role

The Commis III supports the kitchen team at Marriott’s resort on Denarau Island, preparing ingredients, cooking and ensuring food quality and safety. This full‑time, on‑site position is ideal for an enthusiastic individual looking to develop a career in hospitality cuisine.

Key responsibilities

• Prepare and portion ingredients, wash, peel, chop and store fresh produce.
• Measure, mix and cook foods according to recipes, quality and presentation standards.
• Operate ovens, stoves, grills, microwaves and fryers, and test foods for proper doneness.
• Set up and break down work stations, serve food in correct portions, and maintain a clean, sanitized kitchen environment.
• Monitor appliance and food temperatures, follow safety policies and report any hazards.

Required profile

• Certificate or diploma in Culinary Arts or Hospitality (advantageous) and previous kitchen experience preferred.
• Strong attention to detail, cleanliness and food presentation.
• Good communication, teamwork and willingness to learn from senior staff.
• Ability to work flexible shifts, including weekends and public holidays.
• Physically fit for prolonged standing, lifting up to 25 lb and handling kitchen tasks.
• Legal right to work in Fiji.
