Specialty Chef - Japanese

About the role

Radisson Hotel Group is looking for a Specialty Chef - Japanese to join its team. This is an island-based role in Fiji, and the chef brings culinary excellence, leadership and a passion for creating memorable dining experiences.

Key responsibilities

• Prepare and present high-quality dishes according to approved recipes, brand standards and guest expectations.
• Take ownership of the assigned kitchen section and ensure smooth preparation and service.
• Maintain consistency in taste, presentation, portion control and food quality.
• Manage mise-en-place, stock rotation, storage and par levels while minimising food waste.
• Support food costing, inventory control, ordering and kitchen expense management.
• Uphold food safety, hygiene, HACCP and workplace safety standards.
• Support senior chefs with kitchen coordination during busy services, functions and events.
• Guide, train and mentor junior chefs, and contribute to menu development, recipe standardisation and continuous improvement.
• Keep kitchen equipment, preparation areas, chillers and storage areas safe and clean, and deliver guest-focused hospitality.

Required profile

• Certificate or diploma in Culinary Arts, or equivalent culinary qualification.
• Minimum 4-6 years' experience in hotel, resort or professional kitchen operations, with strong experience in Japanese cuisine.
• Proven experience leading, guiding and mentoring kitchen team members.
• Ability to work shifts, weekends and public holidays as required.

Required skills

• Excellent technical cooking skills and knowledge of authentic Japanese ingredients, flavours, preparation methods and techniques.
• Strong knowledge of HACCP, food safety, hygiene and kitchen safety standards.
• Menu development, food costing, ordering, inventory, portion control and stock management.
• Strong communication and teamwork skills in a fast-paced kitchen.
