Chief Steward

About the role

The Chief Steward leads all stewarding and kitchen utility operations, ensuring top‑level cleanliness, sanitation and efficiency across dishwashing, back‑dock maintenance and banquet support. This role drives guest and employee satisfaction while maintaining budget control and compliance with brand and safety standards.

Key responsibilities

• Oversee day‑to‑day stewarding activities, including dish room, night cleaning and back‑dock areas.
• Support banquet functions with plating, food running and equipment readiness.
• Maintain inventory of clean china, glassware, silverware and cleaning supplies.
• Conduct regular inspections to ensure hygiene, safety and proper equipment operation.
• Lead, train and motivate the stewarding team, fostering a positive work environment.
• Ensure compliance with food safety, sanitation and local regulations.
• Monitor inventory, control costs and support departmental budgeting.

Required profile

• Diploma or degree in Hospitality, Business Administration or related field.
• Minimum 4 years of experience in stewarding, kitchen utility or related food‑and‑beverage operations.
• Proven leadership and team‑management abilities.
• Strong problem‑solving, organizational and communication skills.
• Ability to work in a fast‑paced, high‑pressure environment and flexible to work shifts, weekends and public holidays.

Required skills

• Knowledge of food safety, sanitation and hygiene standards.
• Experience managing inventory, supplies and kitchen equipment.
• Familiarity with dishwashing machinery and cleaning procedures.
