About the role

The Director of Food & Beverage provides strategic leadership and operational oversight for all food and beverage outlets at the Westin property on Denarau Island. This senior role ensures brand standards are met while delivering exceptional guest experiences and driving financial performance.

Key responsibilities

• Lead and manage restaurants, bars, in‑room dining, banquets, catering and culinary operations, ensuring consistent quality and service.
• Develop and execute revenue‑growth strategies, including innovative dining concepts, promotions and events.
• Control the annual F&B budget, monitor financial performance, and implement cost‑control measures.
• Partner with the Executive Chef and culinary team to maintain food quality, menu innovation and operational excellence.
• Champion guest experience by monitoring feedback, handling service recovery and promoting Marriott’s service culture.
• Lead, coach and develop the F&B leadership team, fostering a culture of accountability and continuous improvement.
